Potato masala is the most popular side dish for Poori in Tamil nadu hotels and households. Its the best combo that one loves to have for breakfast. In this recipe, I have shared the hotel style secret recipe of potato masala. Not only as a side dish for puri, you can also use this masala to spread in masala dosa. Poori masala without Potato

Here is the the most delicious Hotel Saravana bhavan style vegetable kurma / HSB kurma which can be served with Chapathi, Parotta, Idiyappam, Appam and Poori. Its an all rounder recipe and a crowd pleaser in party and get together lunch and dinner.

North Indian Potato bhaji / Aloo Sabzi
I tried this North Indian style Potato Bhaji / Aloo Sabzi at home after tasting in a dhaba. It is so easy to make and tastes finger licking delicious. Though its a North Indian recipe, there are many aloo bhaji versions like Bengali, Gujarati, Maharashtrian, Pakistani etc. Here I have shared a basic Potato gravy adding onion, tomato and masala powders. I am sure you can enjoy this sabzi with Poori & chapati as well if you like semi gravy type side dishes.

Chole masala for bhature & Puri

Sagu is a popular side dish for poori in Karnataka. This Averakalu sagu is prepared adding Field beans / Lima beans as the major ingredient. Its a seasonal side dish. People never fail to make this dish during the season.

Chana kurma / Kondakadalai kurma
South Indian style Chana Kurma (Kondakadalai kurma in Tamil) is a must try side dish for poori. Its our family favorite as well. The taste of this kurma will bring hotel flavors to you.

Green Peas kurma / Pattani kuruma
My mom makes varieties of kuruma kulambu for idli,dosa. This Green peas kurma / pattani kurma is one of its kind. I am happy that I got an easy, yummy green peas kurma that goes well not only for chapathi, poori but also for idli,dosa. I hope this kurma tastes well with mild pulao and rice varieties too. For variations, you can also add boiled potato along with peas.

Cauliflower kurma
This is my mom’s special Cauliflower kurma recipe. We call this as All rounder gravy as it goes well with idli, dosa, chapathi, poori and rice. My mom makes it during Sunday morning in bulk quantity and takes break from cooking. We relish this gravy all through the day with main courses.

Bombay chutney – An easy side dish for Poori
A simple side dish that needs no coconut, no dal, no potato is this Bombay Chutney. With besan flour, tomato as base it tastes great ! You can even skip onion and garlic on fasting / Vrat days.

Aamras
Aamras recipe is very popular side dish for Puri in Gujarat, Maharashtra and Rajasthan & its made during festivals. Each recipe has its own mild variations. First I felt Poori Aamras to be an unusual combo but after I tried, I realised its taste and loved it. It was tasting like jam with poori or roti. Kids would love this combo.

Dahi aloo – Dahi wali aloo for vrat
In North India, people make dahi wale aloo during fast/Vrat for roti or poori. Dahi aloo is a yogurt based/curd based dish in which boiled potatoes are cooked with spices. It is most popular in Rajasthan. I could relate its taste to Dahi kadhi.

Tomato thokku in pressure cooker
A simple side dish for puri with just tomato and onion. Usually we make tomato thokku for Idli, dosa but surprisingly it tastes great with poori and chapathi as well. Do give this a try.

Paneer korma
A simple Paneer Korma in Mughalai style with curd, cashews & coconut masala. But use fresh curd for best results. This gravy goes well with Ghee rice and Pulao too.

Paneer Butter Masala
