For Custard Base
- 2 ½ cups Whole milk (approx. 500 ml / 17 fl oz) divided
- ¼ cup Milk (approx. 60 ml / 2 fl oz) cold or at room temperature to dissolve custard powder
- 2 tbsp Vanilla custard powder (approx. 20g) eggless
- 4 to 5 tbsp Sugar (approx. 50g / 1/4 cup) adjust to taste
- ½ tsp Vanilla essence / extract optional
For Fruits & Nuts
- 1 ½ to 2 cups Mixed fruits (approx. 250g) chopped apple, banana, mango, seedless grapes, pomegranate
- 2 tbsp Nuts & cherries (approx. 20g) chopped cashews, almonds / badam, glazed cherries & tutti frutti
In a wide, heavy-bottomed pan, bring 2 1/2 cups of milk to a boil. Add 4 to 5 tbsp of sugar and stir until the sugar dissolves completely.
In a small bowl, take 1/4 cup of cold milk and add 2 tbsp of vanilla custard powder. Whisk thoroughly until smooth with no lumps.
Lower the flame to medium-low. Slowly pour the custard mixture into the boiling milk while stirring continuously with a whisk. Cook for 3 to 4 minutes until the mixture thickens to a creamy coating consistency like dosa batter. Stir constantly to prevent scorching at the bottom.
Turn off the flame and stir in 1/2 tsp of vanilla essence. Allow the custard to cool completely to room temperature, stirring occasionally to prevent a skin from forming. Cover and refrigerate for at least 2 hours to chill.
Just before serving, chop your choice of fresh fruits and nuts into bite-sized pieces. Add them to the chilled custard, mix gently, and garnish with cherries, pomegranate pearls, and roasted cashews. Serve chilled and enjoy!

- Adjust sugar as per your taste buds.
- Adding cherries, tutti frutti, cashews, and badam gives a nice crunchy taste while eating. So never skip it.
