Nowadays I have become crazy to try 1 minute microwave cakes and cookies recipes in a mug. After making my one minute microwave mug cake and 5 minutes eggless oreo cake successfully, I have become more confident in trying out recipes under few minutes using microwave. Somehow my daughter Raksha is also fond of these instant recipes because she loves to help me in making them. Here is a one minute microwave, eggless brownie in a mug.
Recently we tasted brownie with ice cream in KFC and loved it a lot. Raksha was asking me to prepare the same at home. Basically I was not aware of the difference between a cake and brownie. When I googled for it, I found few differences from here that the texture of cake should be spongy & fluffy. So it needs a leavening agent like baking powder & soda whereas the texture of brownie is dense and chewy. So it doesn’t require all these. Also a brownie tastes more chocolaty than a cake.
When I tried this one minute brownie recipe in a mug from here using cocoa powder, it tasted perfect. As I defined above, it was more chocolaty, mildly sweet, dense and slightly chewy too. I can name it as “perfect brownie in a mug” and that too under 2 minutes. Moreover this brownie tasted the best when we had with vanilla ice cream. You know what my daughter told after tasting this brownie, she told ”mom, this is the world’s best eggless brownie” as if she had tasted all brownies in the world. - Microwave Wattage: Standard microwaves in the US, UK, and international kitchens typically operate at 1000W–1200W, whereas older or standard Indian microwaves are 800W. If using a 1000W+ microwave, start by baking for 50 to 60 seconds. Add time in 10-second increments to avoid over-baking.
- Mug Selection: Use a standard 10–12 oz (300–350 ml) microwave-safe ceramic coffee mug with straight sides. Ensure the batter fills no more than half the mug so it doesn’t overflow as it expands during cooking.
- Cocoa Powder Quality: Unsweetened Dutch-process cocoa powder (like Hershey’s Special Dark, Droste, or Valrhona) or natural unsweetened cocoa powder (like Hershey’s or Cadbury) both work wonderfully for deep chocolate flavor.
- Texture Check: True brownies do not use baking powder or baking soda; the texture should be fudgy, dense, and slightly gooey in the center rather than cakey. It firms up further as it cools.
Eggless 1 Min Microwave Brownie in a Mug
Ingredients
Brownie Batter Ingredients
- ¼ cup All-purpose flour / Maida (approx. 30g / 1 oz) levelled
- ¼ cup Granulated sugar (approx. 50g / 1.7 oz) or caster sugar
- 2 tbsp Unsweetened cocoa powder (approx. 14g / 0.5 oz) good quality
- 2 tbsp Melted butter (approx. 30 ml / 1 fl oz) unsalted, melted
- ¼ cup + ½ tbsp Milk at room temperature (approx. 67 ml / 2.3 fl oz)
- ¼ tsp Vanilla extract / essence (approx. 1.25 ml)
Optional Toppings
- 1 scoop Vanilla ice cream to serve warm brownie
Instructions
- In a wide mixing bowl (or directly in a microwave-safe mug), add all the dry ingredients: all-purpose flour (maida), sugar, and unsweetened cocoa powder. Whisk well with a fork to remove any lumps.

- Add melted butter, room temperature milk, and vanilla essence. Mix well for about 1 minute in one direction until the sugar is dissolved and the batter becomes smooth, glossy, and falls like a ribbon.

- Transfer the mixture to a 10–12 oz microwave-safe ceramic coffee mug (or bake directly in the bowl if microwave-safe). The batter should fill no more than half the mug.

- Microwave on HIGH power (800W) for 1 minute to 1 minute 20 seconds. Check the texture; if the top looks wet or fluid, microwave in short 10-second bursts. Insert a toothpick or skewer into the center—when it comes out mostly clean, the brownie is done. Do not over-bake, as brownies become hard and rubbery.

- Carefully remove the mug (it will be hot). Let it rest for 1 minute to settle. Top with a generous scoop of vanilla ice cream or a drizzle of chocolate sauce and serve immediately while warm!
Notes
- Color of brownie may slightly vary as per the color of cocoa powder. I used Weikfield cocoa powder which was dark in color.
- While mixing the dry ingredients, make sure there are no lumps.
- Add the wet ingredients and mix in one direction always.
- Never over bake it. Keep it for a minute first. Remove and check its texture. If you find any fluid on top, keep it for 10 seconds again and check. Repeat the same until a toothpick or back of spoon comes out clean. Over baking makes the brownie hard and chewy.
